Five quick, simple sauces and finishing drizzles that make roasted or steamed vegetables taste far more exciting, without much extra effort.

Plain roasted vegetables are good. Roasted vegetables with the right sauce drizzled over the top are the thing people actually go back for seconds of. None of these take more than five minutes.

1. Lemon Tahini

Whisk tahini with lemon juice, a splash of water, and a pinch of salt until it's pourable. It's nutty, bright, and works on almost every roasted vegetable, especially cauliflower and sweet potato.

2. Balsamic Glaze

Simmer balsamic vinegar in a small pan until it reduces by about half and coats the back of a spoon. That's it. Drizzled over roasted beets or carrots, it adds a deep, tangy sweetness that plain vinegar can't match.

3. Garlic Herb Oil

Warm olive oil gently with minced garlic and chopped herbs like parsley or thyme for a minute or two, just until fragrant. Spoon it over anything straight from the oven.

4. Yogurt Sauce

Stir plain yogurt with a squeeze of lemon, a small grated garlic clove, and salt. The cool, tangy hit is especially good against warm, charred vegetables like eggplant or zucchini.

5. Chili Crisp Butter

Melt butter and stir in a spoonful of chili crisp until combined. It sounds simple because it is, but the mix of richness and heat makes even plain green beans disappear fast.

Make a double batch of whichever one you like best. Most of these keep in the fridge for a week and are just as good spooned over eggs, grain bowls, or grilled meat.
