
A loaded, smoky, indulgent showstopper of a burger — a thick juicy beef patty glazed in tangy barbecue sauce, blanketed in melted cheddar, piled with crispy bacon and sweet caramelised onions, all stacked on a toasted bun. The ultimate burger upgrade.
Melt the butter in a pan over low heat. Add the sliced onions with a pinch of salt and cook slowly, stirring often, for 15–20 minutes until deep golden, jammy, and sweet. Set aside. This can be done while everything else cooks.
Fry the bacon in a separate pan over medium heat until deeply crisp and golden, then drain on a wire rack. Gently shape the beef into 4 patties slightly wider than the buns, pressing a shallow dimple into the centre of each.
Season the patties generously with salt and pepper on both sides. Cook on a hot griddle or skillet for 3–4 minutes per side for medium, brushing the tops with barbecue sauce in the last minute so it caramelises into a sticky glaze.
In the final minute of cooking, lay a slice of cheddar on each patty and cover the pan briefly to melt it into a gooey blanket. Remove the patties and let them rest for 3 minutes off the heat.
Build each burger: spread barbecue sauce on the toasted bun, then layer lettuce, tomato, the cheesy BBQ-glazed patty, two slices of crispy bacon, and a generous spoon of caramelised onions. Crown with the top bun and serve immediately.
