Toss the bread cubes with a tablespoon of olive oil and a pinch of salt, then toast in a 190°C (375°F) oven for 8–10 minutes until golden and crisp.
Whisk together the mayonnaise, garlic, lemon juice, mustard, and remaining olive oil in a small bowl to make the dressing. Season with salt and pepper.
Place the chopped romaine in a large bowl and pour over the dressing. Toss well until every leaf is lightly coated.
