π·οΈ PROCESS STEP: Step 2 preparation
Cook the fries until extra crispy and deep golden, either deep-fried, oven-baked, or air-fried per the recipe or package. Aim for crispier than usual since they'll be holding up heavy toppings.
Make the cheese sauce: melt the butter in a saucepan over medium heat, whisk in the flour, and cook for 1 minute to form a roux. Gradually whisk in the warm milk until smooth and thickened into a silky bechamel.
Remove the sauce from the heat and stir in the 150g of grated sharp cheddar, smoked paprika, garlic powder, and a pinch of salt until the cheese melts into a glossy, pourable sauce.
Pile the hot crispy fries onto a large ovenproof platter or tray. Pour over the warm cheese sauce, then scatter the extra grated cheddar and chopped crispy bacon on top.
Slide the loaded tray under a hot grill/broiler for 2β3 minutes until the top cheese is bubbling and golden. Finish with sliced spring onions and a drizzle of sour cream. Serve immediately, straight from the tray.
