
A soft, moist loaf made with ripe bananas and warm hints of cinnamon — the perfect way to use up spotty bananas and fill the kitchen with a cozy smell.
Preheat the oven to 175°C (350°F) and grease a 9x5-inch loaf pan.
Mash the bananas well in a large bowl, then stir in the melted butter, brown sugar, egg, and vanilla until smooth.
Sprinkle the flour, baking soda, cinnamon, and a pinch of salt over the banana mixture, then fold in gently until just combined.
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, until a toothpick inserted in the centre comes out clean.
Let the loaf cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
